What is it about ethnic recipes that makes them so special?

I think the answer is easy, but multifaceted.

They remind us of our parents, grandparents, great-grandparents or, in some cases, relatives who brought these recipes with them from the 'old country.'  We dig
back into our memories and see them preparing these specialties and the lovely aromas and special feelings they created in keeping the traditions alive.

2)   Ties to our heritage.  These dishes forge a connection to many of us who were born here to 'the past'.

3)   We are a multiethnic country with many cuisines coming into the mainstream to be enjoyed by all.  We have expanded our horizons to embrace new cultures
and frequently this begins at the table.
